This Greek-inspired low-carb chicken salad combines juicy chicken breast, crisp cucumber, ripe tomatoes, Kalamata olives and feta with a fresh lemon-and-oregano dressing. It makes a satisfying lunch or a light dinner.
Serves: 4 · Prep time: 15 minutes · Cook time: 10–12 minutes · Difficulty: Easy
Ingredients (serves 4)
- 500 g chicken breast
- 1 large cucumber
- 300 g ripe tomatoes or cherry tomatoes
- 1 green bell pepper
- 150 g feta cheese
- 100 g pitted Kalamata olives
- ½ red onion
- 2 tbsp olive oil for cooking
- For the dressing: 3 tbsp olive oil, 1½ tbsp lemon juice, 1 tsp dried oregano, salt and black pepper
- For the chicken: 1 tsp oregano, ½ tsp paprika, salt and pepper
Step-by-step instructions
1. Season and cook the chicken
Pat the chicken dry and cut it into strips. Season with oregano, paprika, salt and pepper. Heat 2 tablespoons of olive oil in a pan and cook the chicken for about 5–6 minutes per side, depending on thickness, until fully cooked. Let it rest briefly, then slice.
2. Prepare the vegetables
Cut the cucumber and tomatoes into bite-sized pieces. Remove the seeds from the pepper and dice it. Slice the red onion thinly. Place the vegetables and olives in a large bowl.
3. Mix the lemon-oregano dressing
Whisk together the olive oil, lemon juice, oregano, salt and pepper. Add the dressing shortly before serving and toss gently.
4. Assemble the salad
Crumble or cube the feta. Arrange the chicken over the salad, then add the feta and olives. Finish with a little extra oregano if you like.
Tips for the best flavour
- Let the chicken rest for 3–5 minutes after cooking to help keep it juicy.
- Add fresh garlic to the dressing or a pinch of chilli for extra punch.
- For meal prep, store the dressing separately and toss it with the salad just before eating.
- Feta and olives are already salty, so season the dressing carefully.
